LEMONGRASS SKEWERS – NEM SA

INGREDIENTS

  • 500gr coarse minced pork
  • 400 finely minced pork
  • 5g tapioca (cassava) flour
  • 1 teaspoon fish sauce
  • 2 teaspoons oil
  • 1 teaspoon seasoning powder
  • 1 teaspoon pepper
  • 5g minced lemongrass
  • 20 pieces of lemongrass

EQUIPMENTS

  • Hand whisk
  • 1 deep bowl
  • Hammer
  • Cutting board
  • Non-sticky Frying pan

PRACTICES

Step1: In a deep bowl mix together:

  • Minced pork, minced garlic, seasoning powder, pepper, minced lemongrass, fish sauce, oil and tapioca flour
  • Mix everything together very thoroughly until they are well combined – take about 5 minutes

Step 2: Put the lemongrass on the cutting board and crush with the hammer to release the flavor

Step 3: Press the mixture firmly around the lemongrass pieces

Step 4: Heat oil on the pan

Step 5: Fry lemongrass skewers on low to medium heat, until change to brown color

Step 6: Present on the plates and serve with herbs and fish sauce
