INGREDIENTS
- 500gr coarse minced pork
- 400 finely minced pork
- 5g tapioca (cassava) flour
- 1 teaspoon fish sauce
- 2 teaspoons oil
- 1 teaspoon seasoning powder
- 1 teaspoon pepper
- 5g minced lemongrass
- 20 pieces of lemongrass
EQUIPMENTS
- Hand whisk
- 1 deep bowl
- Hammer
- Cutting board
- Non-sticky Frying pan
PRACTICES
Step1: In a deep bowl mix together:
- Minced pork, minced garlic, seasoning powder, pepper, minced lemongrass, fish sauce, oil and tapioca flour
- Mix everything together very thoroughly until they are well combined – take about 5 minutes
Step 2: Put the lemongrass on the cutting board and crush with the hammer to release the flavor
Step 3: Press the mixture firmly around the lemongrass pieces
Step 4: Heat oil on the pan
Step 5: Fry lemongrass skewers on low to medium heat, until change to brown color
Step 6: Present on the plates and serve with herbs and fish sauce
